Is it possible to make pudding with soy milk?

Can you use soy milk in pudding? I have a whole carton of vanilla soy milk in the fridge that I have not opened yet, I was wondering if I could use it to make pudding? I just threw out a half gallon of milk because it went bad. Soy milk is the only thing in the fridge. Could I use it?
I love soy milk. I just have a hard time using the whole carton within the seven day expiration.

Soy can be used as milk replacement for anything including pudding prefer the silk unsweetened and love the silk unsweetened and love the taste.
